MINNEAPOLIS (WCCO) – A 55-year-old Minneapolis man, a former food services director for Open Arms of Minnesota, pleaded guilty Friday to embezzling about $155,000.

The Hennepin County Attorney’s Office said Nicholas Collins pleaded guilty to four counts of theft by swindle and his sentencing is set for June 4.

In 2011 and 2012, Collins contacted several branches of Meals on Wheels, Loaves and Fishes, and some homebound residents and offered to have Open Arms prepare meals for them, according to the criminal complaint.

The complaint states he asked the checks to be made out to himself. Collins allegedly covered his actions by telling supervisors that he was simply talking to other organizations to determine whether it would be possible to expand Open Arms’ meal deliveries.
